{"id":28,"date":"2013-11-22T00:27:17","date_gmt":"2013-11-22T00:27:17","guid":{"rendered":"http:\/\/buysaffrononline.co.uk\/blog\/?p=28"},"modified":"2018-10-24T23:11:24","modified_gmt":"2018-10-24T23:11:24","slug":"lamb-curry-with-saffron-basmati-rice","status":"publish","type":"post","link":"https:\/\/buysaffrononline.co.uk\/blog\/lamb-curry-with-saffron-basmati-rice\/","title":{"rendered":"Lamb Curry With Saffron Basmati Rice"},"content":{"rendered":"<p><a href=\"http:\/\/buysaffrononline.co.uk\/blog\/wp-content\/uploads\/2013\/11\/\u00edndice.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-321  alignright\" src=\"http:\/\/buysaffrononline.co.uk\/blog\/wp-content\/uploads\/2013\/11\/lamb-saffron-curry.jpg\" alt=\"Lamb Saffron Curry\" width=\"317\" height=\"238\" title=\"\" srcset=\"https:\/\/buysaffrononline.co.uk\/blog\/wp-content\/uploads\/2013\/11\/lamb-saffron-curry.jpg 540w, https:\/\/buysaffrononline.co.uk\/blog\/wp-content\/uploads\/2013\/11\/lamb-saffron-curry-300x226.jpg 300w\" sizes=\"auto, (max-width: 317px) 100vw, 317px\" \/><\/a>Cook this warm and spicy curry for a simple meal.<br \/>\n<span style=\"text-decoration: underline;\">Ingredients<\/span><\/p>\n<p>For the curry :<\/p>\n<p>2 tbsp olive oil<\/p>\n<p>450g\/1lb mix of loin of lamb and leg of lamb, cut into 5cm\/2in pieces<\/p>\n<p><!--more--><\/p>\n<p>2 onions, roughly chopped<\/p>\n<p>4 garlic cloves, finely chopped<\/p>\n<p>4 small red chillies, seeds removed, finely chopped<\/p>\n<p>1 tsp finely chopped fresh root ginger<\/p>\n<p>1 cinnamon stick<\/p>\n<p>1 tsp ground turmeric<\/p>\n<p>1 tsp garam masala<\/p>\n<p>1 tsp ground cumin<\/p>\n<p>3 juicy beef tomatoes (weighing about 150g\/5oz each), roughly chopped<\/p>\n<p>2 large field mushrooms (about 150g\/5oz in total), roughly chopped<\/p>\n<p>1 lime, juice only<\/p>\n<p>salt and freshly ground black pepper<\/p>\n<p>For the rice<\/p>\n<p>150g\/5oz white basmati rice<\/p>\n<p>\u00bd tsp ground <a href=\"http:\/\/buysaffrononline.co.uk\" target=\"_blank\" rel=\"noopener\">saffron threads<\/a>, infused in 4 tbsp hot water<\/p>\n<p>salt and freshly ground black pepper<\/p>\n<p>Preparation method<\/p>\n<p>For the curry, heat half of the olive oil in a large, heavy-based frying-pan over a medium-high heat. Add the lamb (in batches if necessary to avoid overcrowding the pan) and brown evenly all over for 4-5 minutes.<\/p>\n<p>Stir in the onion, garlic, chillies and ginger with a little more of the oil and fry for 4-5 minutes, or until the vegetables have softened and are golden-brown. Add the cinnamon stick, turmeric, garam masala and cumin and fry, stirring well, for one minute.<br \/>\nAdd the tomatoes and mushrooms to the pan then reduce the heat to low and simmer gently for one hour, or until the lamb is tender. Add a splash of boiling water to the pan during cooking if the mixture starts to look dry.<\/p>\n<p>Meanwhile, for the rice, place the rice into a large saucepan and cover with enough water to reach about 2.5cm\/1in above the rice. Add the saffron and its soaking water and place the pan over a high heat.<\/p>\n<p>As soon as the water comes to a rolling boil, reduce the heat to its lowest setting and cover the pan with a lid. Cook gently for 8-10 minutes, without stirring, or until the rice is tender and the water has been absorbed, then season, to taste, with salt and freshly ground black pepper.<\/p>\n<p>When the curry is cooked, squeeze the lime juice over the curry, season, to taste, with salt and freshly ground black pepper and serve with the rice.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Cook this warm and spicy curry for a simple meal.
